Do you like regular mashed potatoes made from baking potato? I am not quite fond of it. If you feel the same like I do, lets we try this recipe. Instead of making mashed potatoes from baking potato we will use yams and sweet potato. I got this recipe from Wegman (local grocery store here in Erie). It tastes sweet and delicious. My son loves it.
4 yams (peeled)
4 white sweet potatoes (peeled)
4-6 tbsp milk
11/2 stick (12 tbsp) unsalted butter
1/3 cup brown sugar

Salt and pepper to taste
1. Place potatoes in stockpot; cover with cold water. Bring to boil on high; reduce heat to medium. Simmer potatoes 20-25 min, until tender when pierced with knife tip. Drain and return to pot. Heat on low.
3-5 min to remove excess moisture.
2. Puree potatoes,, milk, butter and brown sugar until smooth using food processor or with stick blender.
Season to taste with salt and pepper.
